How To Make Churros Ice Cream Sandwich

Ingredients
- 1 cup water
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 2 tablespoons vegetable oil
- 1 cup all-purpose flour
- 2 eggs
- 1 teaspoon vanilla extract
- Vegetable oil for frying
- 1/4 cup sugar
- 1 teaspoon ground cinnamon
- 1 pint of your favorite ice cream
Instructions

In a medium saucepan, combine water, sugar, salt, and vegetable oil. Bring to a boil over medium heat.

Remove saucepan from heat and add flour all at once. Stir vigorously until mixture forms a ball.

In a separate bowl, beat eggs and vanilla extract together. Add the egg mixture to the dough and stir until well combined.

Heat vegetable oil in a large pot or deep fryer to 375°F (190°C).

Transfer dough to a piping bag fitted with a large star tip. Pipe 4-inch strips of dough into the hot oil, cutting them with kitchen scissors.

Fry the churros until golden brown, about 2-3 minutes on each side. Remove from oil and drain on paper towels.

In a shallow dish, mix together sugar and cinnamon. Roll the warm churros in the cinnamon-sugar mixture until coated.

Allow the churros to cool completely. Once cooled, slice each churro in half horizontally.

Take a scoop of ice cream and place it between two churro halves to form a sandwich.

Repeat with the remaining churros and ice cream.
