How To Make Pumpkin Bars with Cream Cheese Frosting

- 1 cup pumpkin puree
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 eggs
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions

Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.

In a mixing bowl, whisk together the pumpkin puree, eggs, sugar, oil, and vanilla extract until well combined.

In a separate bowl, combine the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

Gradually add the dry ingredients to the pumpkin mixture, stirring until just combined.

Pour the batter into the prepared baking dish and smooth the top with a spatula.

Bake for 25 minutes or until a toothpick inserted into the center comes out clean.

While the bars are cooling, prepare the cream cheese frosting. In a bowl, beat the cream cheese and butter until smooth and creamy.

Once the bars are completely cooled, spread the cream cheese frosting evenly over the top.
