Ingredients

  • 2 cups fresh blackberries
  • 1 cup all-purpose flour
  • 1/2 cup shredded coconut
  • 1/2 cup unsalted butter, melted
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a square baking dish.

  2. In a mixing bowl, combine the flour, shredded coconut, sugar, baking powder, and salt.

  3. Add in the melted butter, milk, and vanilla extract. Mix until well combined.

  4. Spread half of the batter into the greased baking dish.

  5. Sprinkle the fresh blackberries evenly over the batter.

  6. Drop spoonfuls of the remaining batter over the blackberries, covering as much as possible.

  7. Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the edges are slightly crispy.

  8. Remove from the oven and let cool before cutting into square pieces.

  9. Serve the blackberry & coconut squares as a delicious dessert.
