Ingredients

  • 1/2 cup unsalted butter
  • 1/2 cup semisweet chocolate chips
  • 1 cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/4 cup all-purpose flour
  • 2 tbsp instant espresso powder
  • 1/4 cup vodka
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a square baking dish.

  2. In a microwave-safe bowl, melt the butter and chocolate chips together in the microwave, stirring every 30 seconds until smooth.

  3. In a separate bowl, whisk together the sugar, eggs, and vanilla extract until well combined.

  4. Pour the melted chocolate mixture into the sugar mixture and stir until fully incorporated.

  5. Add the flour and instant espresso powder to the batter and mix until just combined.

  6. In a small microwave-safe bowl, heat the vodka for 15 seconds.

  7. Pour the heated vodka into the batter, stirring until combined.

  8. Pour the batter into the greased baking dish and smooth the top with a spatula.

  9. Bake for 25 minutes or until the edges are set and the center is still slightly jiggly.

  10. Remove from the oven and let cool for 10 minutes. Dust with powdered sugar before serving.

  11. Cut into squares and serve warm.
