How To Make Polenta & Pancetta Stuffing
Stuffing is a great add-on to your main dishes. More than just something to fill the turkey with during Thanksgiving, stuffing is a wonderful side dish to complement your dish of choice. There’s no stopping you in enjoying this stuffing recipe!

Ingredients
- 1 cup polenta
- 4 cups chicken or vegetable broth
- 4 ounces pancetta, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried sage
- 1/2 cup grated Parmesan cheese
- Salt and pepper, to taste
Instructions

In a large saucepan, bring the broth to a boil. Gradually whisk in the polenta and reduce the heat to low. Cook, stirring frequently, for about 20 minutes or until thickened and creamy.

In a separate skillet, cook the diced pancetta until crispy. Remove from the skillet and set aside.

In the same skillet, sauté the onion and garlic until softened and translucent.

Add the cooked pancetta, onion, garlic, dried thyme, and dried sage to the polenta. Stir well to combine.

Remove from heat and stir in the grated Parmesan cheese. Season with salt and pepper to taste.

Transfer the stuffing to a baking dish and bake at 375°F (190°C) for about 10 minutes or until golden on top.
