Ingredients

  • 4 chicken breasts
  • 4 oz cream cheese, softened
  • 2 cloves garlic, minced
  • 1 tbsp fresh chives, chopped
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Butterfly the chicken breasts by slicing horizontally through the middle, without cutting all the way through.

  3. In a bowl, mix together the softened cream cheese, minced garlic, chopped chives, salt, and pepper.

  4. Spread about 1 tablespoon of the cream cheese mixture onto one side of each chicken breast.

  5. Fold the chicken breasts closed and secure with toothpicks.

  6. Heat some olive oil in a skillet over medium-high heat.

  7. Sear the stuffed chicken breasts on each side until golden brown.

  8. Transfer the seared chicken breasts to a baking dish and bake in the preheated oven for about 15-20 minutes, or until the chicken is cooked through.

  9. Remove the toothpicks and serve the stuffed chicken breasts hot.
