Easy Spinach Rice Recipe

How To Make Easy Spinach Rice

Put together a simple side dish with this spinach rice recipe. Long grain rice is tossed with bullion and sauteed spinach then finished with grated cheese.

Preparation: 10 minutes
Cooking: 20 minutes
Total: 30 minutes

Serves:

Ingredients

  • 1cuplong grain rice
  • 1chicken or vegetable bullion
  • 2cupswater
  • 2tspbutter
  • 10ozfrozen spinach,thawed
  • 2clovesgarlic
  • 2tspolive oil
  • salt
  • fresh grated cheese,optional

Instructions

  1. In a small heavy pot, melt butter. Add rice and saute for about 1 minute.

  2. Add water and bullion and bring to a boil. When all liquid evaporates, reduce the flame to low and cover. Cook for about 15 minutes.

  3. Shut the flame off and keep covered for another 5 minutes to let the steam finish cooking the rice.

  4. Meanwhile, in a saute pan, heat olive oil. Add garlic and saute until golden.

  5. Add spinach and salt, mixing well for about 4 minutes.

  6. Toss rice with spinach and top with good grating cheese like Pecorino Romano.
