Ingredients

  • 2 cups cooked white rice
  • 2 chicken breasts, sliced
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 1 carrot, diced
  • 2 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sambal oelek (spicy chili paste)
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Instructions

  1. Heat vegetable oil in a large pan or wok over medium heat.

  2. Add the minced garlic and diced onion, and cook until fragrant and slightly softened.

  3. Add the sliced chicken breasts to the pan and cook until browned and cooked through.

  4. Add the diced red bell pepper and carrot, and cook for another 2-3 minutes until vegetables are slightly tender.

  5. Push the chicken and vegetables to one side of the pan, and crack the eggs into the clear space. Scramble the eggs until cooked through.

  6. Add the cooked rice to the pan and stir everything together until well combined.

  7. Stir in the soy sauce and sambal oelek, adjusting the amount of spice to your preference.

  8. Season with salt and pepper to taste.

  9. Cook for another 2-3 minutes, allowing the flavors to meld together.

  10. Serve the spicy chicken nasi goreng hot, garnished with chopped green onions.
