How To Make Pineapple Fried Rice
If you want to put a twist to the usual fried rice, try adding chunky pineapples. Add chicken and bell peppers, this pineapple fried rice is a must-try.

Ingredients
- 3cupsSuccess® Jasmine Riceor cooked rice, leftover is fine!
- ¾lbchicken breastboneless
- 1tbspvegetable oildivided
- ½cuponionchopped
- ½cupcarrotschopped
- ½cupred bell pepperchopped
- ½cupfrozen peas
- 1cuppineapplediced
- ⅓cupbaconcooked
- 3tbspsoy sauce
- 1tbsptoasted sesame oil
- Salt and pepperto taste
- sliced green onionsoptional
Instructions

Cook the rice according to package directions.

In a large skillet, heat 2 teaspoons of vegetable oil over medium-high heat. Add the chicken and saute until browned and cooked through for about 4 to 5 minutes. Season to taste with salt and pepper.

Remove the chicken from the pan and place it on a plate. Cover with foil to keep warm.

Wipe out the pan with a paper towel. Heat the remaining teaspoon of vegetable oil over medium-high heat.

Add the onion and carrot to the pan, cook for 3 to 5 minutes until softened. Stir in the red bell pepper, pineapple and bacon; cook 2 to 3 minutes more.

Add the rice to the pan, along with the reserved chicken and frozen peas. Stir in the soy sauce and sesame oil and mix gently until everything is thoroughly combined. Season to taste with soy sauce, salt, and pepper.

Serve immediately, sprinkle with sliced green onions.
