How To Make Poor Man’s Fried Rice

Loaded with ginger, green onions, and eggs, this fried rice recipe is a great savory side dish with sesame oil and soy sauce.

Ingredients

  • 1½cupsinstant rice,uncooked
  • 1tbspsesame oil
  • soy sauce,to taste
  • 2eggs,beaten
  • 1tspfresh ginger root,finely chopped
  • ¼cupgreen onions,finely chopped

Instructions

  1. Bring the water to a boil in a medium saucepan. Stir in rice and cover. Remove from heat and let stand 5 minutes. Fluff with a fork and drain any excess water.

  2. Heat the oil in a large skillet over medium heat. Stir in the rice and soy sauce, heat briefly, then transfer rice to a bowl.

  3. Scramble the eggs in the same skillet, then stir in the rice. Stir in the ginger and green onions, then heat through.

  4. Serve warm, and enjoy!
