How To Make Cilantro Lime Cauliflower Rice

Surprise your family with a hearty meal with this cauliflower rice recipe. A good squeeze of lime juice plus roughly chopped cilantro is a combo to die for.

  • 1largecauliflower
  • 1tbspextra-virgin olive oilor coconut oil
  • 1pconionchopped
  • 2pcsscallionssliced finely
  • 2garlic
  • 1pclime
  • ¼cupcilantro
  • saltto taste
  • pepperto taste


  1. In a blender or food processor, add 1 cup of cauliflower florets at a time working in batches and pulse each batch quickly about 3 to 5 times or until the cauliflower is the same consistency as rice.

  2. Transfer to a large bowl and repeat with the remaining cauliflower until all done.

  3. Heat a large skillet or nonstick pan over medium heat.

  4. Add olive oil, onions, scallions, and garlic and sauté for about 3 minutes on low-medium heat, until soft and fragrant.

  5. Add the cauliflower “rice”: season with salt and pepper to your tastes; increase stove temperature to high heat.

  6. Add the lime juice and cilantro; stir mixture and cook, while stirring frequently for about 6 minutes, or until the cauliflower is tender-crisp.
