How To Make Brown Coconut Rice with Cilantro

Brown coconut rice, a delicious and full of aroma dish of Thai descent, uses a healthier type of rice and coconut milk that gives a hint of sweetness.

Ingredients

  • 1cupbrown rice,uncooked, brown jasmine, basmati or short grain works well
  • 1cuplite coconut milk
  • 1¼cupswater
  • 1tspfresh ginger,grated
  • 1garlic clove,crushed
  • ¼tspsalt,or more to taste
  • 2tbspsweetened coconut,grated
  • 3tbspcilantro

Instructions

  1. In a medium sized heavy pot, add coconut milk, rice, water, ginger, garlic, salt and coconut; bring to a bowl over medium heat.

  2. Reduce heat to low, cover, and simmer for about 40-45 minutes until all liquid evaporates.

  3. Remove from heat. Keep covered for about 10 minutes.

  4. Fluff with a fork; toss with cilantro.
