How To Make 10-Minute Pineapple Black Bean Tostadas

Ingredients

For Tostada:

  • 1package Old El Paso Tostada Shells
  • 2cans Old El Paso Black Bean Refried Beans
  • 2ripe avocadospeeled, pitted and sliced
  • 1pineapple salsa
  • queso fresco crumbled

For Pineapple Salsa:

  • 2cupsfresh pineapplediced
  • cup fresh cilantroloosely-packed, chopped
  • ½ cup red oniondiced
  • 1jalapenosmall, seeded and finely-chopped
  • 2tbsplime juicefresh
  • ¼ tspground cumin
  • ¼ tspsalt
  • tspblack pepper

Instructions

To make the tostadas:

  1. Place a tostada shell on a flat work surface. Carefully spread a large spoonful of the refried beans evenly on top of the tostada.

  2. Top with a few slices of avocado, then add it on a large spoonful of pineapple salsa. Sprinkle with a pinch of queso fresco.

  3. Serve immediately.

To make the pineapple salsa:

  1. Toss all ingredients together until combined.
