- 4 large potatoes
- vegetable oil, for frying
- salt, to taste

Wash and peel the potatoes. Slice them into thin, even rounds using a mandoline or a sharp knife.

Place the potato slices in a bowl of cold water and let them soak for 10 minutes to remove excess starch.

Drain the potatoes and pat them dry with a clean kitchen towel.

Heat vegetable oil in a deep frying pan or a deep fryer to 350°F (175°C).

Carefully add the potato slices into the hot oil, making sure not to overcrowd the pan. Fry in batches if necessary.

Fry the potato slices for about 4-5 minutes, until they turn golden brown and crispy. Use a slotted spoon to remove the chips from the hot oil and transfer them to a paper towel-lined plate to drain excess oil.

Sprinkle the hot chips with salt to taste. Toss gently to evenly distribute the salt.

Allow the chips to cool completely before serving. They will continue to crisp up as they cool.
