
How To Make Yogurt Panna Cotta with Mascerated Berries
Enjoy a smooth and rich bite of this panna cotta, made creamier and healthier with yogurt, and topped with tart berries, for a tangy sweet treat!

Ingredients
- nonstick spray
- 3tbspmilk,1% fat
- 1¼cupsfat milk,1% fat
- ½tbspunflavored gelatin
- 6tbspsugar,divided
- 1cupGreek yogurt,plain 0%
- 1tspvanilla extract
- 4cupsmixed berries,blackberries, raspberries and sliced strawberries
- 8small mint leaves,for garnish
Instructions

Spray eight 4-ounce ramekins with nonstick spray.

Pour 3 tablespoons of milk into small bowl, then sprinkle the gelatin over top. Let it stand for 10 minutes.

Heat the remaining milk and 5 tablespoons of sugar in small saucepan over medium heat. Add the gelatin mixture and stir until the sugar and gelatin are completely dissolved. Do not boil.

Remove from heat and let cool slightly. Whisk in the yogurt and vanilla until smooth.

Divide the mixture equally among the prepared ramekins, cover with plastic wrap, and chill until firm for at least 6 hours or overnight.

About 30 minutes before serving, combine the berries with the remaining 1 tablespoon of sugar in a medium bowl. Stir occasionally with rubber spatula for at least 10 minutes, until juicy.

Unmold each panna cotta onto small plate, then top each with ½ cup of berries.

Garnish with fresh mint leaves, and enjoy!
