Preparation: 10 minutes
Cooking: N/A
Total: 8-24 hours (fermentation time included)

Serves:

Ingredients

  • 4 cups of milk
  • 1/2 cup of plain yogurt (with live cultures)
  • 2 tablespoons of sugar
  • 1 tablespoon of vanilla extract

Instructions

  1. Heat the milk in a pot over medium heat until it reaches a temperature of 180°F (82°C). Stir occasionally to prevent burning.

  2. Remove the pot from heat and let the milk cool to 110°F (43°C). You can use a thermometer to check the temperature.

  3. In a small bowl, whisk together the plain yogurt and sugar until well combined.

  4. Add the yogurt mixture to the cooled milk and whisk until smooth.

  5. Stir in the vanilla extract.

  6. Cover the pot with a lid and wrap it in a towel to keep it warm.

  7. Place the pot in a warm place (like inside the oven with the light on) for 8-24 hours to allow the yogurt to ferment. The longer it ferments, the tangier it will become.

  8. After the fermentation time, refrigerate the yogurt for at least 2 hours to chill and thicken.

  9. Serve the homemade vanilla yogurt with your favorite toppings or enjoy it plain.
