Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can pinto beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 4 large potatoes, cut into wedges
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and cook until softened.

  2. Add the diced bell peppers and cook for another 2-3 minutes.

  3. Add the kidney beans, black beans, pinto beans, diced tomatoes, vegetable broth, chili powder, cumin, smoked paprika, salt, and pepper to the pot. Stir well to combine.

  4. Bring the chili to a simmer and let it cook for 30 minutes, stirring occasionally.

  5. While the chili is cooking, preheat the oven to 425°F (220°C). Place the potato wedges on a baking sheet and drizzle them with olive oil. Sprinkle with garlic powder, paprika, salt, and black pepper. Toss to coat.

  6. Bake the potato wedges for 25-30 minutes, or until crispy and golden brown.

  7. Serve the mixed-bean chili with the crispy potato wedges on the side.
