Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup white sugar
  • 2 eggs
  • 1/4 cup milk
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup dried mixed fruits (such as raisins, currants, candied cherries)
  • 1/4 cup chopped nuts (such as almonds, walnuts)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a loaf pan.

  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.

  3. Beat in the eggs, one at a time, then stir in the milk and vanilla extract.

  4. In a separate bowl, whisk together the flour, baking powder, and salt.

  5. Gradually add the dry ingredients to the butter mixture, mixing until just combined.

  6. Fold in the dried fruits and nuts.

  7. Pour the batter into the prepared loaf pan and smooth the top.

  8. Bake for 1 hour and 30 minutes, or until a toothpick inserted into the center comes out clean.

  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
