How To Make Lainy’s Bibingka Recipe

A traditional Filipino cake made with rice flour and coconut milk, topped with salted egg and cheese.

Ingredients

  • 1 cup rice flour
  • 1/2 cup sugar
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup coconut milk
  • 2 eggs
  • 1/4 cup butter, melted
  • 4 salted eggs, sliced
  • 1/2 cup cheese, grated

Instructions

  1. Preheat oven to 375°F.

  2. In a large bowl, combine rice flour, sugar, baking powder, and salt.

  3. In a separate bowl, whisk together coconut milk, eggs, and melted butter.

  4. Add wet ingredients to dry ingredients and mix until smooth.

  5. Pour batter into a greased 8-inch round cake pan.

  6. Top with sliced salted eggs and grated cheese.

  7. Bake for 45 minutes or until cake is cooked through.

  8. Serve hot and enjoy!
