How To Make Roast Beef with Roasted Vegetables

It’s always the season for merry making and nothing gets merrier than a full stomach. These Christmas recipes will do the trick for happy smiles and bellies. Nobody goes on diet and no tummy goes hungry during Christmas!

Serves:

Ingredients

  • 1.5 lbs of beef roast
  • 1 tbsp of olive oil
  • 1 tsp of salt
  • 1 tsp of black pepper
  • 1 tsp of garlic powder
  • 4 carrots, peeled and chopped
  • 4 potatoes, peeled and chopped
  • 1 onion, sliced
  • 2 tbsp of melted butter
  • Fresh herbs (such as rosemary or thyme) for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Rub the beef roast with olive oil, salt, black pepper, and garlic powder.

  3. Place the roast in a roasting pan and add the chopped carrots, potatoes, and sliced onion around it.

  4. Drizzle the melted butter over the vegetables and season with salt and pepper.

  5. Roast the beef and vegetables in the preheated oven for 1 hour 30 minutes, or until the beef reaches your desired level of doneness.

  6. Remove the roast from the oven and let it rest for 10 minutes before slicing.

  7. Serve the roast beef slices with the roasted vegetables on the side. Garnish with fresh herbs if desired.
