  • ¼cupextra virgin olive oil
  • 2lbssmall okra
  • salt and freshly ground pepper,to taste
  • 6clovesgarlic
  • ½cupsalted cashews,roasted
  • 1tsplime zest,finely grated
  • lime wedges,for serving


  1. In a large skillet, heat the oil until shimmering. Add the okra, season with salt and pepper, and cook over high heat, stirring, for about 5 minutes until tender.

  2. Add the garlic to the skillet and cook over moderate heat for 3 minutes until softened and fragrant. Stir in the cashews and lime zest.

  3. Transfer the okra to a platter, garnish with the lime wedges, and serve.
