How To Make Morel Mushroom Soup

Serve a hearty bowl of morel mushroom soup to feel warm during cold seasons! This dish consists of morel slices added with flour and milk.

Ingredients

  • 1 lb fresh morel, or other mushrooms, sliced
  • 2 tbsp lemon juice
  • 1 large onion, chopped
  • 3 tbsp butter
  • 2 tbsp all-purpose flour
  • 4 cups milk
  • 3 tsp chicken bouillon granules
  • 1⁄2 tsp dried thyme
  • 1⁄2 tsp salt
  • 1⁄8 tsp pepper

Instructions

  1. Sprinkle mushrooms with lemon juice.

  2. In a saucepan, saute the mushrooms and onion in butter until tender. Sprinkle with flour; stir well.

  3. Gradually add milk, bouillon, thyme, salt and pepper. Boil and stir for 2 minutes.

  4. Reduce heat; simmer for 10-15 minutes. Serve immediately.
