This quick and easy pasta and vegetable saute promises a flavorful and filling dish made from mushrooms, pasta, bell peppers, baby corn, and carrots.

  • ½cupolive oil
  • 1onion,thinly sliced
  • 1red bell pepper,thinly sliced
  • 1green bell pepper,sliced
  • 1carrot,sliced
  • ½cupgreen onions,chopped
  • 2clovesgarlic,minced
  • ozbaby corn,(1 can) drained
  • ozmushrooms,(1 can) drained
  • 1tspdried parsley
  • ¼tspgarlic powder
  • salt and pepper,to taste
  • 2tbspparmesan cheese,grated
  • 1lbpasta,uncooked


  1. Heat olive oil in a large saucepan. Add onion, peppers, and carrot and saute until onion is golden.

  2. Stir in the scallions and minced garlic and saute for 2 minutes. Stir in the baby corn, mushroom, and seasonings, and heat through.

  3. Meanwhile, cook pasta according to the package instructions.

  4. Toss the cooked pasta with the vegetables and top with parmesan cheese, if desired.

  5. Serve and enjoy.
