  • 1tbspolive oil
  • 1slicebacon,chopped
  • 3clovesgarlic,chopped
  • 1bunchcollard greens,washed and dried
  • salt,to taste

Instructions

  1. Remove the tough stems that run down the center of the leaf.

  2. Stack a few leaves, roll and slice into thin strips.

  3. In a large saute pan, heat bacon on low heat.

  4. When bacon fat melts, add oil and garlic, saute for about 1 minute until golden.

  5. Add chopped collards to the pan, season with salt, to taste, and cover.

  6. Cook for about 10 minutes until the leaves are tender, stirring occasionally.
