How To Make Carrots in Sherry

Carrots recipe to add as a side dish to any delicious meal

  • 2 lb carrots (scraped and quartered)
  • ¼ cup butter (or margarine)
  • 1 tsp salt
  • ⅛ tsp pepper
  • ¼ tsp sugar
  • ½ cup sherry
  • 2 tsp parsley (minced )
  1. Sauté carrots in melted butter, turning until well coated.
  2. Sprinkle with salt, pepper and sugar.
  3. Add sherry and simmer gently for 5 minutes.
  4. Add water just to cover; simmer, covered, for 15 to 20 minutes or until tender.

  5. Remove cover and cook over medium heat until most of the liquid has evaporated.

  6. Sprinkle with parsley before serving.
