Ingredients
- 500g prawns, peeled and deveined
- 4 cups of chicken or vegetable broth
- 2 stalks of lemongrass, bruised
- 4 kaffir lime leaves
- 2 Thai chilies, thinly sliced
- 3 cloves of garlic, minced
- 1-inch piece of ginger, sliced
- 1 tomato, cut into wedges
- 2 tablespoons of fish sauce
- 2 tablespoons of lime juice
- 1 tablespoon of sugar
- 1/4 cup of fresh cilantro leaves
- 1/4 cup of green onions, chopped
Instructions

In a large pot, bring the broth to a boil. Add lemongrass, kaffir lime leaves, Thai chilies, garlic, and ginger. Cook for 5 minutes.

Add prawns and cook until they turn pink and opaque, about 3-4 minutes.

Stir in fish sauce, lime juice, and sugar. Add tomato wedges and cook for 2 minutes.
