  • 500g prawns, peeled and deveined
  • 4 cups of chicken or vegetable broth
  • 2 stalks of lemongrass, bruised
  • 4 kaffir lime leaves
  • 2 Thai chilies, thinly sliced
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, sliced
  • 1 tomato, cut into wedges
  • 2 tablespoons of fish sauce
  • 2 tablespoons of lime juice
  • 1 tablespoon of sugar
  • 1/4 cup of fresh cilantro leaves
  • 1/4 cup of green onions, chopped

Instructions

  1. In a large pot, bring the broth to a boil. Add lemongrass, kaffir lime leaves, Thai chilies, garlic, and ginger. Cook for 5 minutes.

  2. Add prawns and cook until they turn pink and opaque, about 3-4 minutes.

  3. Stir in fish sauce, lime juice, and sugar. Add tomato wedges and cook for 2 minutes.

  4. Remove from heat and garnish with cilantro leaves and green onions.

  5. Serve hot and enjoy!
