This soup is a flavorful blend of Thai spices and noodles in a savory broth that will warm you up on a cold day.

Ingredients

  • 8 oz. rice noodles
  • 1 tbsp. vegetable oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 tbsp. red curry paste
  • 1 can (14 oz.) coconut milk
  • 4 cups chicken broth
  • 1 tbsp. fish sauce
  • 1 tbsp. brown sugar
  • 1 lime, juiced
  • 1 cup chicken breast, cooked and shredded
  • 1 cup bean sprouts
  • 1/2 cup cilantro leaves, chopped
  • 2 green onions, sliced
  • 1 red chili pepper, sliced
  • Lime wedges, for serving

Instructions

  1. Cook rice noodles according to package directions. Drain and set aside.

  2. In a large pot, heat vegetable oil over medium heat. Add onion and garlic and cook until onion is translucent.

  3. Add red curry paste and cook for 1-2 minutes. Add coconut milk, chicken broth, fish sauce, and brown sugar. Bring to a simmer and cook for 10 minutes.

  4. Add lime juice, chicken, and bean sprouts to the soup and cook for 5 minutes.

  5. To serve, divide the cooked rice noodles into 4 bowls and pour the soup over the noodles.

  6. Top each bowl with cilantro, green onions, and chili pepper slices. Serve with lime wedges.
