Ingredients

  • 500g prawns, peeled and deveined
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 4 spring onions, sliced
  • 1 red chili, sliced (optional)
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon fish sauce
  • 1 teaspoon sugar
  • 1/4 cup chicken or vegetable broth
  • Fresh cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a wok or large skillet over high heat. Add the garlic, ginger, spring onions, and chili (if using) and stir-fry for 1 minute.

  2. Add the prawns and cook until they turn pink and opaque, about 3-4 minutes.

  3. In a small bowl, whisk together the soy sauce, oyster sauce, fish sauce, sugar, and broth. Pour the sauce over the prawns and stir-fry for another 1-2 minutes until the prawns are coated and the sauce has thickened slightly.

  4. Remove from heat and garnish with fresh cilantro.

  5. Serve the Thai Prawn, Ginger & Spring Onion Stir-Fry hot with steamed rice or noodles.
