Ingredients

  • 500g prawns, cleaned and deveined
  • 2 tbsp vegetable oil
  • 2 tbsp red curry paste
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup coconut milk
  • 1 tbsp fish sauce
  • 1 tbsp sugar
  • 1 lime, juiced
  • 1/4 cup fresh basil leaves
  • Salt, to taste

Instructions

  1. Heat oil in a pan and add red curry paste. Stir well and cook for a minute.

  2. Add sliced onions and garlic and stir-fry for 2-3 minutes until fragrant.

  3. Add sliced bell peppers and stir-fry for another 2-3 minutes.

  4. Add cleaned prawns, fish sauce, and sugar, and cook for 2-3 minutes.

  5. Add coconut milk and simmer for 10-12 minutes until prawns are cooked and the sauce has thickened.

  6. Turn off the heat and add lime juice and fresh basil leaves. Stir well.

  7. Serve hot with steamed rice.
