Ingredients

  • 4 cups vegetable broth
  • 2 cups water
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • 1 tsp chili paste
  • 1 tsp garlic, minced
  • 1 tsp ginger, grated
  • 1 cup mushrooms, sliced
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 1 cup tofu, cubed
  • 2 green onions, sliced
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, bring the vegetable broth and water to a boil.

  2. Add soy sauce, rice vinegar, brown sugar, lime juice, chili paste, garlic, and ginger. Stir well.

  3. Reduce heat to medium and add mushrooms, bell peppers, carrots, and tofu. Cook for 10 minutes.

  4. Add green onions and cook for an additional 5 minutes.

  5. Serve hot, garnished with fresh cilantro.
