  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp green curry paste
  • 1 can (13.5 oz) coconut milk
  • 1 cup chicken broth
  • 1 red bell pepper, thinly sliced
  • 1 cup green beans, trimmed and halved
  • 1 cup sliced bamboo shoots
  • 2 tbsp fish sauce
  • 1 tsp brown sugar
  • Juice of 1 lime
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. In a large skillet or wok, heat some oil over medium heat. Add the green curry paste and cook for 1-2 minutes until fragrant.

  2. Add the chicken to the skillet and cook until browned on all sides, about 5 minutes.

  3. Pour in the coconut milk and chicken broth, stirring well to combine. Bring to a simmer.

  4. Add the red bell pepper, green beans, and bamboo shoots. Cook for 8-10 minutes until the vegetables are tender and the chicken is cooked through.

  5. Stir in the fish sauce, brown sugar, and lime juice. Taste and adjust the seasoning if needed.

  6. Serve the Thai green curry chicken over cooked rice, garnished with fresh cilantro.
