- 400g white fish fillets, deboned and mashed
- 2 tbsp red curry paste
- 1 egg
- 1 tbsp fish sauce
- 2 tbsp cornstarch
- 2 kaffir lime leaves, finely chopped
- Vegetable oil, for frying
- 1/4 cup sweet chilli sauce
- Fresh coriander leaves, for garnish
- Lime wedges, for serving

In a large mixing bowl, combine mashed fish fillets, red curry paste, egg, fish sauce, cornstarch, and kaffir lime leaves. Mix well until all ingredients are combined.

Heat vegetable oil in a frying pan over medium heat. Take a spoonful of the fish mixture and shape it into a small patty. Repeat with the remaining mixture.

Fry the fishcakes in batches for 3-4 minutes on each side until golden brown and cooked through. Remove from the pan and drain on paper towels.

Serve the Thai fishcakes with sweet chilli sauce, garnished with fresh coriander leaves. Serve with lime wedges on the side for an extra tangy kick.
