- 2 boneless, skinless chicken breasts, diced
- 1 small onion, diced
- 1 red bell pepper, diced
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 2 tablespoons all-purpose flour
- 1 cup chicken broth
- 1 cup milk
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon dried thyme
- 2 tablespoons butter
- 2 tablespoons fresh parsley, chopped
- 4 cups cooked rice or noodles
Instructions

In a large skillet, heat the butter over medium heat. Add the chicken and cook until browned and cooked through. Remove from the skillet and set aside.

In the same skillet, add the onion, bell pepper, mushrooms, and garlic. Cook until vegetables are tender.

Sprinkle the flour over the vegetables and stir to coat. Cook for 1 minute.

Gradually whisk in the chicken broth and milk. Cook until the sauce thickens.

Add the cooked chicken back to the skillet. Stir in the salt, black pepper, paprika, and thyme. Cook for an additional 2-3 minutes.
