  • 2 lbs. pumpkin (peeled )
  • 5 cups chicken broth
  • salt (to taste)
  • black pepper (to taste, freshly ground )
  1. Place pumpkin or squash in a deep saucepan. Pour in your chicken stock and a pinch of salt to taste.

  2. Turn the heat to high and bring to a boil.

  3. Adjust heat to a low so that the mixture simmers.

  4. Cook about 30 minutes until the pumpkin is very tender.

  5. Serve hot.
