Ingredients

  • 6 oz potatoes, finely diced
  • oz carrot, finely diced
  • 8 cups water, or vegetable broth
  • 4 cups white beans, or any of choice, canned and undrained
  • 2 cups ham, finely diced, cooked
  • 1 cup barley
  • 1 cup tomatoes, deseeded and diced
  • 1 bay leaf
  • salt and ground black pepper, to taste

Instructions

  1. In a crock pot, add the potatoes, carrots, tomatoes, bay leaf, beans, barley, ham, and water or vegetable broth.

  2. Cook on high for 5 hours.

  3. Adjust seasoning with salt and pepper. Portion and serve!
