How To Make Crab-Okra Gumbo

  • 1 lb okra (clean, trimmed, stemmed)
  • 2 lbs fresh crab meat (picked-over)
  • 16 cups chicken stock
  • ½ cup oil
  • ¾ cup flour
  • 1 large onion (chopped)
  • 6 garlic cloves (chopped)
  • 1 can tomatoes (crushed)
  • 2 bay leaves
  • 1 tsp thyme
  • tabasco sauce (few drops )
  • 1 piece ham (or veal stew or both)
  • 1 tbsp lard
  • green onion tops
  • 1 tsp parsley
  • 1 leek
  • dash of salt (to taste)
  • dash of pepper (to taste)
  • 4 cups white rice (long-grained, cooked)
  1. Cut the okra in small pieces.

  2. Combine all ingredients in a stock pot and heat through for 25 minutes.

  3. Serve over cooked rice.
