How To Make Crab-Okra Gumbo

Ingredients
- 1 lb okra, clean, trimmed, stemmed
- 2 lb crab meat, fresh and picked-over
- 1 lb shrimp, fresh, shelled and deveined
- 12 cups chicken stock
- ½ cup vegetable oil, or canola oil
- ¾ cup flour
- 1 white onion, large, chopped
- 6 garlic cloves, chopped
- tomatoes, (1 can), crushed
- 2 bay leaves
- 1 tsp thyme
- tabasco sauce, few drops
- 1 cup ham, diced
- 1 cup veal meat, cubed
- 2 tbsp butter, or lard
- ½ cup leeks , or green onions, thinly sliced
- 1 tbsp parsley
- 2 leeks, chopped
- salt and pepper , to taste
- 4 cups white rice, long-grained, cooked
Instructions
- Whisk flour and chicken stock in a deep pot.
- Combine all the ingredients in a stockpot except for the shrimps, butter, green onion or leeks, and chopped parsley.
- Heat for 15 to 20 minutes then add your shrimps, green onion or leeks, parsley, and butter to the boiling mixture. Stir and cook for another 5 minutes.
- Once done, stir in the herbs and adjust the seasoning. Serve over cooked rice and enjoy!
