How To Make Chinese Chicken Noodle Soup with Peanut Sauce

- 4 boneless, skinless chicken breasts
- 8 cups chicken broth
- 1 cup peanut butter
- 1/4 cup soy sauce
- 2 tablespoons sesame oil
- 2 tablespoons rice vinegar
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 1 teaspoon red pepper flakes
- 8 ounces rice noodles
- 4 green onions, sliced
- 1/4 cup chopped peanuts
- Fresh cilantro, for garnish
Instructions

In a large pot, bring the chicken broth to a boil. Add the chicken breasts and simmer for 15-20 minutes, until cooked through. Remove the chicken from the pot and shred it using two forks.

In a separate bowl, combine peanut butter, soy sauce, sesame oil, rice vinegar, garlic, ginger, and red pepper flakes. Whisk until smooth.

Return the shredded chicken to the pot with the chicken broth. Stir in the peanut sauce mixture and simmer for another 5 minutes.

Meanwhile, cook the rice noodles according to package instructions. Drain and set aside.

To serve, divide the cooked rice noodles among four bowls. Ladle the chicken soup over the noodles. Top with sliced green onions, chopped peanuts, and fresh cilantro. Enjoy!
