Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 onion, diced
  • 3 carrots, chopped
  • 3 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Place chicken breasts in the slow cooker.

  2. Add diced onion, chopped carrots, chopped celery, minced garlic, dried thyme, dried rosemary, bay leaf, salt, and pepper.

  3. Pour chicken broth over the ingredients in the slow cooker.

  4. Stir the ingredients to combine.

  5. Cook on high for 4 hours or low for 6-8 hours, until the chicken is cooked through and tender.

  6. Remove chicken from the slow cooker and shred it using two forks.

  7. Return shredded chicken to the soup and stir.

  8. Taste and adjust seasonings if needed.

  9. Serve hot, garnished with fresh parsley.
