How To Make Roesti

  • 4 large potatoes, peeled
  • 1 small onion, finely chopped
  • 2 tablespoons of butter
  • Salt and pepper to taste


  1. Grate the potatoes using the large holes of a grater.

  2. Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out the excess liquid.

  3. In a large bowl, combine the grated potatoes, chopped onion, salt, and pepper. Mix well.

  4. In a large non-stick skillet, melt the butter over medium heat.

  5. Add the potato mixture to the skillet, spreading it out evenly.

  6. Press the potato mixture down firmly with a spatula to form a compact layer.

  7. Cook the roesti on medium heat for about 10-12 minutes or until golden brown and crispy on the bottom.

  8. Carefully flip the roesti using a large, flat plate. Slide the roesti back into the skillet, uncooked side down.

  9. Cook for another 10-12 minutes until the other side is golden brown and crispy.

  10. Remove from the skillet and cut into wedges. Serve hot.
