How To Make Roesti

Ingredients
- 4 large potatoes, peeled
- 1 small onion, finely chopped
- 2 tablespoons of butter
- Salt and pepper to taste
Instructions

Grate the potatoes using the large holes of a grater.

Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out the excess liquid.

In a large bowl, combine the grated potatoes, chopped onion, salt, and pepper. Mix well.

In a large non-stick skillet, melt the butter over medium heat.

Add the potato mixture to the skillet, spreading it out evenly.

Press the potato mixture down firmly with a spatula to form a compact layer.

Cook the roesti on medium heat for about 10-12 minutes or until golden brown and crispy on the bottom.

Carefully flip the roesti using a large, flat plate. Slide the roesti back into the skillet, uncooked side down.

Cook for another 10-12 minutes until the other side is golden brown and crispy.

Remove from the skillet and cut into wedges. Serve hot.
