How To Make Chef John’s Patatas Bravas

Ingredients

  • 4 large potatoes, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 1 clove garlic, minced
  • 1 tbsp tomato paste
  • 1/2 cup chicken or vegetable broth
  • 1 tsp sugar
  • 1/4 cup mayonnaise
  • 1 clove garlic, grated
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • Chopped parsley, for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, toss the potatoes with olive oil, salt, smoked paprika, and cayenne pepper.

  3. Spread the potatoes in a single layer on a baking sheet and roast for 25-30 minutes, flipping once halfway through, until crispy and golden.

  4. While the potatoes are roasting, prepare the tomato sauce. In a small saucepan, heat 1 tbsp olive oil over medium heat.

  5. Add minced garlic and cook until fragrant, about 1 minute. Stir in tomato paste and cook for another minute.

  6. Pour in broth and sugar, bring to a simmer, and cook for 10 minutes, until the sauce thickens slightly.

  7. Remove from heat and set aside.

  8. In a separate bowl, whisk together mayonnaise, grated garlic, lemon juice, salt, and pepper to make the garlic aioli.

  9. Once the potatoes are done, transfer them to a serving dish and drizzle with the tomato sauce.

  10. Serve the Patatas Bravas with a dollop of garlic aioli on top and garnish with chopped parsley.
