  • 2 tbsp olive oil
  • tsp dried thyme
  • salt and ground black pepper, to season
  • parsley, chopped, to garnish


  1. Preheat your oven to 375 degrees F.

  2. In a big bowl, mix all ingredients and season with salt and pepper.

  3. Lay vegetables in a baking pan lined with parchment paper.

  4. Bake them for 30 minutes, then toss in the remaining liquid when they are done.
