How To Make Roasted Melting Potatoes

  • 1.5 lbs of baby potatoes
  • 3 tbsp of olive oil
  • 1 tsp of garlic powder
  • 1 tsp of dried thyme
  • 1 tsp of salt
  • 1/2 tsp of black pepper
  • Fresh parsley, for garnish (optional)


  1. Preheat the oven to 425°F (220°C).

  2. Cut the baby potatoes in half.

  3. In a large bowl, toss the potatoes with olive oil, garlic powder, dried thyme, salt, and black pepper until well coated.

  4. Place the potatoes cut side down on a baking sheet.

  5. Roast in the preheated oven for 30-35 minutes, until golden and crispy on the outside.

  6. Remove from the oven and garnish with fresh parsley, if desired. Serve hot.
