  • 4 chicken breasts
  • 4 medium potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large baking dish, place the chicken breasts and potatoes.

  3. Drizzle the olive oil over the chicken and potatoes.

  4. Sprinkle the dried rosemary, dried thyme, garlic powder, salt, and pepper evenly over the chicken and potatoes.

  5. Use your hands to gently toss and coat the chicken and potatoes with the seasonings and oil.

  6. Arrange the chicken and potatoes in a single layer in the baking dish.

  7. Roast in the preheated oven for 40-45 minutes or until the chicken is cooked through and the potatoes are golden and crispy.

  8. Remove from the oven and let it rest for a few minutes before serving.
