Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1/2 cup unsalted butter, melted
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh chives
  • 1/2 teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Boil the diced potatoes in salted water until tender, about 10-12 minutes. Drain well.

  3. In a large mixing bowl, combine the melted butter, sour cream, cheddar cheese, chives, garlic powder, salt, and pepper.

  4. Add the drained potatoes to the bowl and toss until evenly coated.

  5. Transfer the potato mixture to a greased baking dish.

  6. Bake in the preheated oven for 45 minutes, or until the top is golden brown.

  7. Serve hot and enjoy!
