Total: 15 mins
Serves:

Ingredients

  • 2 small garlic cloves
  • 1 tbsp olive oil, for sautéing
  • 1 medium zucchini
  • 1/2 bunch basil
  • Salt and pepper, to taste
  • 8 eggs
  • 2 tbsp milk
  • 1/4 cup Parmesan, grated

Instructions

  1. Preheat the broiler.

  2. Crush the garlic and heat it in the olive oil in a medium nonstick sauté pan on the stove.

  3. Slice the zucchini very thinly on a mandolin. When the oil and garlic are heated, add the basil and sliced zucchini into the pan.

  4. Cook until the zucchini is tender but not cooked through, for about 2 minutes. Season with salt and pepper.

  5. Blend eggs in a blender on the highest speed with a little bit of milk and some salt and pepper. Pour the egg mixture into the sauté pan and let it sit for 1 minute.

  6. When the egg is almost fully cooked, add the grated Parmesan on top and place the pan in the broiler for 1 minute.

  7. Take the pan out of the broiler, let it cool and set in the pan for 5 minutes.

  8. Once cooled, invert a plate on top of the pan and turn over. Slice and serve.
