Copycat Bennigan’s Smothered Chicken Recipe

This smothered chicken recipe is so full of flavor with all the spices in the marinade. Topped with sauteed mushrooms and onions, this is a dish to try if you are craving some Bennigan’s.

How To Make Copycat Bennigan’s Smothered Chicken

  • 4 chicken breasts (boneless, skinless )
  • 1 cup onions (sliced)
  • 1 cup mushrooms (sliced )
  • 4 slices bacon (cooked)
  • 3 tbsp butter
  • 1 tsp hickory smoke flavor
  • 4 slices provolone cheese

For Chicken Marinade:

  • 1 tsp basil leaves
  • 1 tbsp garlic powder
  • 3 tbsp hickory smoke flavoring
  • 1/4 cup white cooking wine
  • 1/4 cup vegetable oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vinegar
  1. Combine all marinade ingredients in a bowl.

  2. Marinade the meat in a covered bowl or plastic bag for at least 2 hours.

  3. Sauté mushrooms and onions in butter and hickory smoke flavor for 3 to 5 minutes, or until onions are transparent but not brown and mushrooms are tender.

  4. Remove the chicken from marinade and grill for about 10 minutes. Do not overcook. Once done, remove from the grill and place in a shallow baking dish.

  5. Preheat the oven on broil.

  6. Cover each breast with a strip of bacon, then provolone cheese, then some sautéed onions and mushrooms.

  7. Broil for 3 to 5 minutes, or until cheese is bubbly. Serve.
