
How To Make Jerk Catfish
Jerk catfish is inspired by the Jamaican combination of spices. In this recipe, the fish is broiled until golden brown outside and tender and flaky inside.

Ingredients
- 1cuponion,chopped
- 1clovegarlic
- 1tbspsesame seeds
- 2tspbrown sugar
- 1½tspground allspice
- 1½tspdried thyme
- ½tspnutmeg,grated
- 1¼tspsalt
- ¼tspfresh ground black pepper
- ¼tspcayenne
- 2½tbspcooking oil
- ½tspvinegar
- 2lbcatfish fillets
Instructions

In a blender, puree the onion, garlic, and sesame seeds with the brown sugar, allspice, thyme, nutmeg, 1 teaspoon of the salt, the black pepper, cayenne, oil, and vinegar.

Heat the broiler.

Lightly oil a broiler pan or baking sheet.

Sprinkle both sides of the catfish fillets with the remaining salt and put them on the prepared baking sheet, skinned-side down.

Spread the spice mixture over the fish in an even layer.

Broil the fish, about 6 inches from the heat if possible, until well-browned and just done. This will take about 5 minutes for ¾-inch-thick fillets
