Ingredients

  • 4 (1-inch thick) boneless ribeye steaks
  • 1 tbsp vegetable oil
  • Salt and pepper, to taste
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 2 sprigs rosemary
  • Optional toppings: blue cheese, sautéed mushrooms

Instructions

  1. Preheat oven to 400°F (200°C).

  2. Pat dry the steaks and season liberally with salt and pepper on both sides.

  3. Heat a cast iron pan over high heat and add vegetable oil. Let it heat until it begins to smoke.

  4. Carefully place the steaks into the hot pan and sear for 2-3 minutes on each side until a golden crust forms.

  5. Add butter, minced garlic, and rosemary to the pan. Baste the steaks with the butter mixture using a spoon.

  6. Transfer the cast iron pan to the preheated oven and cook for an additional 10-15 minutes for medium-rare doneness, or until desired level of doneness is achieved.

  7. Remove the steaks from the pan and let them rest for 5 minutes before serving.

  8. Serve the steaks with optional toppings such as blue cheese or sautéed mushrooms.
