How To Make Easy Mozzarella Chicken

This Italian chicken recipe is the perfect meal to have with guests over! It’s topped in a gooey mozarella and tasty tomato sauce for a rich meal.

Ingredients

  • 20ozchicken breastsboneless skinless
  • 1tbspItalian Seasoning
  • 1tsppaprika
  • ½tsponion powder
  • Salt and pepperto season
  • 1tbspolive oil
  • 1onionchopped
  • 4garlic clovesminced
  • 1fire roasted pepperroasted capsicum, chopped
  • 15ozcrushed tomatoesor tomato puree
  • 2tbsptomato pastegarlic and herb flavored optional
  • pinchred pepper flakescrushed, optional
  • ¾cupmozzarellashredded
  • 1tbspparsleyfreshly chopped, to garnish

Instructions

  1. Arrange oven shelf to the middle of the oven.

  2. Preheat broiler on medium heat.

  3. Season the chicken with 2 teaspoons of Italian seasoning, paprika, onion powder, salt and pepper.

  4. Heat oil in a pan or skillet over medium heat.

  5. Cook chicken for 8 minutes on each side until browned and cooked through, Transfer to a plate; set aside.

  6. Cook the onion in the same pan for 3 to 4 minutes until transparent, scraping any browned bits form the bottom of the pan.

  7. Add in the garlic and cook for 1 minute until fragrant.

  8. Add the fire roasted pepper, crushed tomatoes, tomato paste, crushed red pepper flakes and remaining Italian seasoning.

  9. Stir to mix well.

  10. Bring to a simmer and allow the sauce to thicken for 4 minutes while stirring occasionally.

  11. Arrange the chicken in the sauce and top each breast with 2 to 3 tablespoons of mozzarella cheese per breast.

  12. Transfer to the oven to broil for 1 to 2 minutes, or until the cheese is browned and bubbling.

  13. Garnish with parsley, serve, and enjoy!
