How To Make Iced Rhubarb Tea
A wonderful way to serve rhubarb at any time of the day! Rhubarb stalks slowly simmered away to take much of the sour flavor away and mellowed down to a palatable and tasty concentration then rounded of with some sugar for a rich and refreshing drink. This drink goes very well with spring mint for contrast.

Ingredients
- 8 stalks rhubarb, cut into 3 inch lengths
- 8 cups water
- 1/3 cup sugar, to taste
- 1 spring mint, for garnish
Instructions
- Add rhubarb to water and bring to a boil; reduce heat and simmer for 1 hour.
- Strain and add sugar to taste; serve iced with mint garnish.
